As a former chef at restaurant Peenehof, she knows her trade, and again prepares all meals with the utmost care. Veerle takes her inspiration mainly from Belgian and French cuisine.
Her secret? Simplicity, quality and respect for the ingredients. It is in this spirit that she meticulously chooses her products: always with an eye on absolute freshness, and strict about quality.
You can therefore regularly come across her at the local markets in Chateau Chinon and at the 'big market' in Autun, which always attracts crowds. Eating here at La Marquise is eating like home at the table, no fuss, whenever you feel like it, just let the platter of chips, potatoes, rice or bread pass by again, it's on the table.
So we surprised her by cleaning our dish after dinner with a piece of bread....
